There are various different ways in which idli sambar is made of,here we are presenting you the one of the best and delicious idli sambar recipe making process,here you will get the all details about its making process and what type of ingredients required.So lets start the process…

1.To make  IDLI SAMBAR RECIPE,take almost 3/4 of dal cup to a pressure cooker and rinse it very well for few times to make sambar you need 1/2 cup of toor daal and 1/4 cup to moong daal as moong daal gives a nice texture to the sambar recipe.pour atleast 2 cups of water into pressure cooker and wait for 3 whistles..The

2. Do not release the pressure of pressure cooker manually,let it release naturally.after few minutes open the top of cooker and stir as well as mash the daal till it gets a smooth paste.

SPICES REQUIRED FOR SAMBAR`

  • one table spoon of chana daal
  • 5 to 6 dried red chillies
  • 1/2 table spoon of urad daal

and continue roast them on a low flame until they gets golden in color.

3. While the upper process continue put additionaly some corriander seeds and again roast them until they starts smelling good after that remove them all to a plate.Than add 1/4 table spoon of meethi seeds and start roasting them,roast them until  they gets dark in color,after this process again add some cumin seeds and roast them too and grind them and make their powder.

4.Take 3 to 4 pieces of turmeric and make their paste.

FRYING

5. Put one tablespoon of ghee or oil to a frying pan,add 3/4 or cumin seeds as well as 3/4 of mustard seeds and few seeds of maithi seeds.When the seeds start producing sound of frying than add some two to three curry leaves and 1 red chilli,fry them until the chillies gets crispy,

6. Add half size of onion ,small size carrot chopped and 8 to 10 chopped french beans.

7. Saute chopped carrot,onion,and beans for 3 to 4 minutes.

8. Add 1 tomato chopped and mashed and add turmeric paste according to taste and color,add some 3/4 tablespoon of table salt.

9.On slight high speed flame slaut the mashed tomatoes soft and thick.

TIME TO MAKE SAMBAR

10. Add some red chilli powder and sambar powder,saute it for a minute.

11.add 4 to 5 cups of water and add some jaggery.adjust the quantity of water as needed

12.Cook the vegitables until they gets soft cooked and filter tamarind to the pot,if you do not like the taste of tamarind than instead of that you can boil the sambar for a whilebefore adding daal.

13. Add mashed daal to pot,mash the daal completely,boil it until the daal starts giving bubbles

14. Add some chopped corriander leaves add the tempering which was made earlier and keep the sambar cooking on flame until it starts bubbling and as if it starts bubbling shitch of the stove.

INGREDIENTS

  1. 21/2 cup basmati rice.
  2. 11/2 cup urad dal.
  3. 5 tablespoons of sesame oil.
  4. 1/2 tablespoon fenugreek seeds.
  5. salt as required.
  6. water as required.

IDLI MAKING

1.To prepare this popular South Indian recipe, wash rice and urad dal separately and wait until the water runs out.Add fenugreek seeds to the rice and soak the seeds in water for 4-6 hours. Soak the urad dal too for the same amount of time. Drain out the whole water from the urad dal and grind it to a fine paste. Add water accordingly as per your need.Grind both rice seeds and fenugreek seed individually and make their paste.Mix both the pastes together in a large bowl,make sure the consistency is thick.

2. Let the batter ferment, then add salt.Now, the idli batter needs to be well-fermented. This step is very important to get soft and fluffy idlis. Keep the batter in a warm place to ferment. Once the batter has risen, add salt to it and whisk to mix it well.

3. Now its time to put the idli batter(dough) in the idli maker,for this first you have to apply some oil on the base of the idli maker and add ½ cup of water in the idli steamer and let it boil. Put the idli stand inside and close the lid.Let the steam form for 8-10 minutes before switching off the gas.

4. Let the idli maker to cool a bit before scooping the idlis out.wait till the steam is released before you take the idli stand out. Wait for another 5 minutes and then use a sharp knife to scoop the idlis out. Serve warm with coconut chutney and sambhar.
